Fruit Topped Cake

This easy-to-make dessert can please everyone; just use their preferred choice of fruit for topping. Not too sweet, it is good for breakfast, to put in the lunchbox, or for an afternoon snack. This was mom’s way out whenever we, the kids, would pester her for a dessert.

PREPARATION TIME: 30 minutes

BAKING TIME: 35-40 minutes

CAKE:
4 large eggs
1 1/2 cups (300 grams) sugar
6 tablespoons plus 2 teaspoons (100 milliliters) oil
4 tablespoons (60 milliliters) boiling water
2 1/4 cups plus 2 tablespoons (300 grams) all-purpose flour
1 teaspoon baking powder

TOPPING:
Fruits like pitted cherries, sliced plums, sliced apricots, or sliced peaches

DECORATION:
Powdered sugar

EQUIPMENT:
13 x 9-inch baking pan

PREPARATION:

  • Preheat the oven to 350 degrees.
  • Separate the eggs.
  • Whisk the egg whites in a large bowl until soft peaks form.
  • Fold in the egg yolks.
  • Slowly fold in the sugar, oil, boiling water, and then the flour and baking powder.
  • Spread the batter into a well greased and floured pan.
  • Arrange the fruit on top of the cake.
  • Bake at 350 degrees for 30-40 minutes, or until a cake tester comes out clean.
  • Let the cake cool before decorating it with powdered sugar and slicing it.
